Where does my Oil Pressure go?

Ok so this little issue is now driving me a little bonkers.
I can start my car up and let it idle, oil pressure builds up and all is good, take it for a drive, like on my way to work, oil pressure reaches midway and stays steady, happy as larry, but on other instances, take tonight for example, i take a drive that's about 55km and the whole time I'm on the highway my oil pressure is just gone, it's like it just goes on vacation, I pulled into macca's on the way home and thought i'd take the scenic route home and as i'm revving higher up my pressure comes back, after a k or so it's sitting right where i want it. I've been having this issue for a couple weeks now, i changed out the oil pressure sender but both behave similarly, the only difference between the two is that one reads a slightly higher pressure than the other under similar conditions.

Any Ideas on what's going on?

The actual gauge that's in the dash? wouldn't have thought to do that. is it a common problem coz i never heard of it before.

while I'm here another little problem i'm having is that my handbrake light comes on by itself and goes away again just while driving, i checked the wire under the center console and it's connected properly, where else would i find a contact point for this wire?

    common problem.

did you check the level of the brake fluid in the master cylinder. that is the only other thing that will turn that light on

When last did you change the oil and filter?
    What oil are you using?

Low press is usually your motor's way of telling you the oil has turned to water or is just too thin for the worn bearings, if it splashes when you drain it, it's an indication the oil is f/d.

I had this problem recently and a simple oil filter change cured the problem - strange but true - not all filters are equal!
If the filter is blocked it will stop the oil from pressurizing the bearings and sensor
